IN THE VINEYARD
Fertilisation is organic. Standard vineyard practices are carried out in line with careful management. Crop thinning is not required, as yields are naturally balanced. Harvest is carried out in two stages, one week apart: the first at the lower part of the row, the second at the upper part.
VINIFICATION
Traditional vinification with long macerations, including crushing, inoculation, fermentation and maceration, with racking only at the end of maceration. Racking and exposure of the wine to winter temperatures.
AGEING
80% in 20 hl casks and 20% in barriques
