IN THE VINEYARD
The estate is organically farmed. Green manure is sown when autumn weather conditions allow. Yield is limited through green pruning and cluster thinning in August. Shoots are managed by canopy rolling to improve vine balance and health. Soil health is carefully maintained through mechanical tillage and cover cropping
CERTIFIED PRODUCTION PHILOSOPHY:
The estate has been certified organic since 2019 – both in the vineyard and the winery itself
VINIFICATION
Gentle crushing and destemming, followed by long maceration on the skins with temperature control. Fermentation occurs in 55-hL untoasted French oak vats
AGEING
Aged in 25-hL large French oak casks – 12 months
