VINIFICATION
After summer thinning, grapes are harvested by hand into 25 kg ventilated crates. Following a second manual selection on vibrating sorting tables, the grapes undergo gentle pressing. Fermentation with daily pump-overs. Extended skin contact in temperature-controlled steel tanks, using the same automated pump-over and punch-down protocols applied to our Barolo vinifications
AGEING
Aged in large French oak barrels for a minimum of 24–30 months
