Manual harvest, selecting only the grape clusters that have reached perfect ripeness. Cluster thinning to reduce and balance yields per hectare, prioritizing quality over quantity. Canopy and soil management adapted each year according to seasonal conditions. Pruning is carried out with full respect for the plant’s integrity and sap flow, following the Simonit & Sirch branched pruning method. Soil management is aimed at improving and integrating organic matter, including the use of green manure specifically chosen for the characteristics of our vineyards
