Following hand-harvesting of the best clusters into small crates, fermentation takes place in temperature-controlled stainless steel tanks.
AGEING
In the first months of the year following the harvest, ageing begins in small oak barrels for at least 12 months. Before release, the wine rests several more months lying in bottle to continue its evolution
